Read a Cheese

Nobody has ever successfully counted the world’s cheeses — France alone claims more than twelve hundred. But there is essentially one recipe: sour the milk, set it into a curd, cut the curd so the water runs out, salt it, and wait. Every cheese on a counter is that process stopped at a different moment. Find the moment and the whole counter falls into order.

Moisture decides texture, decides how long a cheese can survive, and very nearly decides the family. Read this chart left to right and you are watching water leave. Nothing else about a cheese changes so much, or explains so much.

Plain moisture is the legible version of this. The international standard, Codex CXS 283, instead classifies firmness by moisture on a fat-free basis, in four deliberately overlapping bands — extra hard, hard, firm/semi-hard, soft — so one cheese can legally answer to two of them at once.

Families are not marketing categories. Each is a genuinely different intervention — a different microbe, a different temperature, a different gesture — and each leaves a signature you can see in the cut face.

What the animal decides

Two cheesemakers can run identical processes and produce different cheeses, because the milk arrived different. Fat and protein set the richness and the yield; a pigment most people have never heard of sets the colour. The yields below come from one laboratory protocol run across all four species, so they are directly comparable — a real hard cheese takes far more milk than any of them, around 14 litres per kilo for Parmigiano Reggiano.
